Green Soup

A blend of greens, asparagus, avocado, lime, and jalapeno, this soup is anti-inflammatory and cleansing. The leafy greens pack a nutrient-dense and mineral-rich punch; the avocado is smoothing and is rich in luteins and folate, both great for heart health. The asparagus detoxifies our system, and with the mild heat from the jalapeno and the brightness from the lime, these ingredients combine to make a nutritious, vibrant, and immunity-building soup full of raw energy to keep you going. Great after a long weekend or when your digestion just needs a break. Serve frothy right from the blender, or chilled just out of the refrigerator. Eat [this] to Feel Good.

Green Soup

Ingredients

[Yields: 1-2]

8 thin asparagus pieces, tough stems removed and cut into 1-inch pieces

1 cup water

1 large handful of spinach

couple sprigs of fresh parsley

1/4 avocado

juice from 1 lime

1/2 jalapeno, more or less depending on taste

1 tsp cumin

pinch of sea salt

micro greens, to garnish

Place the asparagus and 1/4 cup of the water into a blender or vitamix. Blend until pureed and smooth. Add the spinach, parsley, avocado, lime, jalapeno, cumin and remaining water. Blend until smooth. Season with sea salt and adjust to your liking by adding more jalapeno and/or lime, if desired.  Puree one final time. Serve immediately or place in the refrigerator until ready to enjoy. Divide into bowls. Garnish with fresh micro greens and a drizzle of really good olive oil, if desired.

    Just made it to go with fresh, wild salmon for tonight’s dinner. So fresh and bright tasting! Great, quick, easy, healthy recipe…oh and I had cilantro on hand so I used in place of parsley…worked great!

      Glad it worked out for you! Cilantro would definitely be a fresh addition…if only my husband liked cilantro.. : )
