Walnut Basil Pesto

Add a little flava’ to your life.  Serve this pesto on your favorite toast, as a sandwich spread, add to soups or toss with pasta. Any way you choose to use it, this nutty and bright concoction will kick up your dishes.  The walnuts keep it meaty and the avocado smooth and delish.  Full of omega’s and heart-health ingredients, feel free to experiment with different nuts and herbs to create your very own!

Walnut Basil Pesto

{Yield: 1/2 cup}

1/2 cup Walnuts

1 cup Fresh Basil Leaves, packed

Freshly Squeezed Lemon Juice, from 1/2 lemon

1 clove Garlic, roughly chopped

1/4 cup Extra Virgin Olive Oil, or Avocado Oil

1/2 small Avocado

Sea Salt, to taste

In a food processor, pulse the walnuts and the basil until well combined. Add the lemon juice, garlic and avocado and allow to process, while slowly adding in the oil from the spout above. You may have to stop a few times to scrape the sides of the bowl until well combined. Season with sea salt, to taste.

    This was deeelish! Added over quinoa for a super nutritious din. Great recipe!
